Honey Cinnamon Oatmeal Cookies
Ingredients
4 oz. unsalted butter, at room temp.
3 oz. sugar
3 oz. brown sugar
2 oz. honey
2 oz. maple syrup
1 tsp. vanilla extract
1 egg
6 oz. all purpose flour
5 oz. rolled oats
1 tbsp. cinnamon
1 tsp. salt
1 tsp. baking soda
Instructions
1. Preheat an oven to 325°F
2. Cream together the butter, sugars, honey, maple syrup, and vanilla extract until light and fluffy, about five
minutes on medium speed in a stand mixer.
3. Add the egg and mix until blended, about 1 minutes on medium speed in a stand mixer.
4. Add the flour, oats, cinnamon, salt, and baking soda. Mix until a batter forms, about 1 minute on low in a
stand mixer.
5. Spoon the batter onto the baking sheets to make 12 large cookies (6 per sheet) and press each mound
down. Refrigerate the dough for 30 minutes before baking.
6. Bake at 325°F for 18 to 20 minutes, or until the cookies set and are golden brown.
7. Cool on the baking sheets for a minute or two, or until cool enough to handle, and move to a cooling rack
to cool completely.
