Chocolate Jalapeno Cookies

Ingredients
6 ounces sugar
4 ounces unsalted butter, at room temperature
1 egg
1⁄2 teaspoon. vanilla
5 ounces all-purpose flour
1 1⁄2 ounces unsweetened cocoa powder
1⁄2 teaspoon baking soda
1⁄2 teaspoon salt
1⁄4 teaspoon cayenne pepper powder
6 ounces dark chocolate, chopped
1 ounce fresh jalapeño, seeded and finely chopped


Instructions
1. Preheat an oven to 350°F. Line two baking sheets with parchment paper
2. In the bowl of a stand mixer, or a large bowl, cream together the sugar and butter until light and fluffy,
about 5 minutes (medium speed).
3. Add the egg and vanilla and mix in until combined, about 1 minute (medium speed). Scrape down the
sides of the bowl as needed.
4. Add the flour, cocoa powder, baking soda, salt, and cayenne pepper. Mix until the dough just comes
together, about 1 minute (low speed). Scrape down the sides of the bowl as needed.
5. Add the chopped chocolate and jalapeño. Mix until it is evenly distributed about 1 minute (low speed).
6. Spoon the dough onto the lined baking sheets, leaving at least an inch between each. Pat down each
dough ball so it is about 1⁄2" tall.
7. Bake in a preheated oven for 10 to 12 minutes, or until they are set and just begin to crack on the top.
8. Let cool on the baking sheet for a few minutes before moving the cookies to a cooling rack to cool
completely.
