Chocolate Cherry & Plum Cobbler
Ingredients
Chocolate Chocolate Chip Cookie Topping
4 ounces unsalted butter, at room temperature
6 ounces granulated sugar
1 egg
1⁄2 teaspoon vanilla
5 ounces flour
11⁄2 ounce cocoa powder
1⁄2 teaspoon baking soda
1⁄2 teaspoon salt
8 ounces dark chocolate chips
Filling
1 pound 6 ounces cherries, pitted & cut in half
1 pound 6 ounces plums, cut in quarters & pit removed
2 ounces sugar
1 ounce cornstarch
1 teasponn lemon zest
Instructions
1. Preheat the oven to 400°F. Butter the inside of a cast iron skillet and set aside.
2. First prepare the chocolate chocolate chip cookie topping by creaming the butter and sugar together.
3. Add the egg and vanilla and mix in well.
4. Add the flour, cocoa powder, baking soda, and salt. Mix until a batter forms.
5. Add the chocolate chips and blend in until even. Set the cookie dough aside.
6. Now prepare the filling by mixing the cherries, plums, sugar, cornstarch, and lemon zest together in a separate bowl.
7. Pour the filling into the cast iron skillet.
8. Bake just the filling in the oven for 20 minutes.
9. Remove from the oven and top the filling with large chunks of cookie dough, enough to cover the top.
10. Reduce the oven to 375°F. Return the cobbler back to the oven and bake for another 20 minutes or untilcthe cookie topping begins to crisp up.
11. Remove from the oven and let cool slightly until warm. Serve right away.
