Sugar Plum & Cinnamon Pancakes

Ingredients
6 ounces all-purpose flour
1 tablespoon baking powder
1 tablespoon. sugar
1 teaspoon salt
2 teaspoon cinnamon
1⁄2 teaspoon nutmeg
1⁄4 cup plain yogurt
1 cup whole milk
1 egg
2 ounces unsalted butter, melted
1 teaspoon vanilla extract
4 sugar plums, sliced
Butter, for greasing the griddle


Instructions
1. Preheat a griddle to 400°F or a large flat skillet over medium heat.
2. In a large bowl mix together the flour, baking powder, sugar, salt, cinnamon and nutmeg.
3. Add the plain yogurt, milk, egg, melted butter, and vanilla to the dry ingredients. Mix in just until a batter forms. Take care not to over mix the batter.
4. Lightly grease the griddle or skillet with butter.
5. Spoon about 1⁄4-1/3 cup scoops of batter onto the griddle. Spread the batter out a little if it doesn't on its own. Add a small handful of sugar plum slices to the top of each pancake. Take care not to place the pancakes too close to each other. You may need to cook them in batches.
6. Cook the pancakes for 4 to 5 minutes on one side until the edges of the batter begin to bubble. Flip the pancake and cook another 4 to 5 minutes until the other side is golden brown. Repeat with the remaining batter.
7. Serve immediately.
