Pecan Oat Belgian Waffles
Ingredients
4 ounces flour
2 ounces oat flour
2 ounces ground pecans
2 ounces sugar
1 tablespoon baking powder
1⁄4 teaspoon salt
3 egg yolks
13⁄4 cup milk
4 ounces unsalted butter, melted
1⁄2 teaspoon vanilla extract
3 egg whites
Instructions
1. Preheat a waffle iron.
2. Mix together the flour, oat flour, ground pecans , sugar, baking powder, and salt. Set aside.
3. Mix together the egg yolks, milk, and melted butter, and vanilla extract. Set aside.
4. Whip the egg whites until they hold firm peaks. Immediately add together the dry flour mixture with the egg yolk and milk mixture, just until a batter comes together.
5. Carefully fold in the whipped egg whites, taking care not to deflate them.
6. Pour the batter into the waffle iron and cook about 4 to 8 minutes, or until golden brown on both sides.
