Coconut Almond Belgian Waffles

Ingredients
4 ounces flour
2 ounces whole wheat pastry flour
2 ounces coconut flour
2 ounces almond flour
2 ounces sugar
1 tablespoon baking powder
1 teaspoon cinnamon
3 egg yolks
1 3⁄4 cup milk
4 ounces unsalted butter, melted
1⁄2 teaspoon vanilla extract
3 egg whites


Instructions
1. Preheat a waffle iron.
2. Mix together the flours, sugar, baking powder, and cinnamon. Set aside.
3. In a separate bowl, mix together the egg yolks, milk, melted butter, and vanilla extract. Set aside.
4. In a separate bowl or in the bowl of a stand mixer, whip the egg whites until they hold firm peaks.
5. Immediately add the wet ingredients to the dry and mix until just blended. Carefully fold the whipped egg whites into the batter, taking care not to deflate them.
6. Scoop the batter into the waffle iron and cook 4 to 8 minutes, or until golden brown on both sides.
