Chocolate Stout Cake Doughnuts

Ingredients
8 ounces flour
2 ounces cocoa powder
10 ounces sugar
1⁄2 teaspoon baking soda
1 teaspoons baking powder
1⁄2 teaspoon kosher salt
1 egg
3⁄4 cups whole milk
1⁄2 cup milk stout beer
1 ounce unsalted butter, melted
1⁄2 teaspoon vanilla
Milk Stout Ganache, recipe below
Chocolate Oat Crumble, recipe below


Instructions
1. Preheat an oven to 350°F. In the meantime, grease a doughnut pan with 12 doughnut moulds.
2. Mix together the flour, cocoa powder, sugar, baking soda, and salt in a bowl.
3. In a separate bowl, mix together the egg, milk, stout, melted butter and vanilla.
4. Add the wet ingredients to the dry and mix until a smooth batter forms.
5. Pour the batter into a piping bag with a large round piping tip. Pipe the batter into the mould, leaving a 1⁄4-inch gap around the top to allow the doughnuts to expand.
6. Bake in a preheat oven for 20 to 22 minutes or until a toothpick inserted into the center of a doughnut comes out clean.
7. Remove from the oven and let cool in the pan a few minutes before removing to a wire rack for a few more minutes before decorating.
8. To decorate: Drizzle each doughnut with Milk Stout Ganache, then top with the Chocolate Oat Crumble.


Milk Stout Ganache

Ingredients
8 oz dark chocolate, chopped
4 fl. oz. chocolate stout, at room temperature
4 fl. oz. heavy cream, at room temperature

Instructions
1. Melt the chocolate in a bain-marie.
2. Add the chocolate stout and heavy cream and mix in until the mixture is completely blended.


Chocolate Oat Crumble

Ingredients
4 ounces rolled oats
1⁄2 ounce milk powder
1⁄2 ounce cocoa powder
2 ounces sugar
2 ounces unsalted butter, melted.

Instructions
1. Preheat an oven to 350°F. Line a baking sheet with parchment paper.
2. Mix all of the ingredients together in a bowl.
3. Spread the mixture on the baking sheet and bake for 10 to 12 minutes, or until the crumble appears dry.
