Lemon Rosemary Butter Cookies

Ingredients
5 oz unsalted butter, at room temp.
2 oz sugar
1⁄4 teaspoon vanilla bean paste
1 tablespoon lemon zest
3 teaspoons rosemary, finely chopped
7 ounces flour


Instructions
1. Cream together together the butter and sugar.
2. Add the vanilla, lemon zest, and rosemary and mix until blended.
3. Add the flour and mix until a dough forms.
4. Roll the dough into a circular log about 1 or 2 inches in diameter and wrap dough log in parchment paper.
Refrigerate until firm, about 30 minutes to 1 hour
5. Preheat an oven to 375°F.
6. Cut the log into 1⁄4 inch slices and place the slices on a lined baking sheet. Rotate the log an eighth to a
quarter of a turn after each couple slices to keep the log round.
7. Bake at 375°F for 14 to 16 minutes, or until golden brown.
